Why You Need Two Plants, Not One

Companions and Antagonists: The Tomato Playbook Mostly Applies

Because tomatillos share so much of tomatoes' biology, the same reasoning largely carries over: basil's scent-masking effect against certain pests is the same plausible-but-unconfirmed mechanism, marigold's root-knot-nematode suppression works the same way regardless of which nightshade it's protecting, and carrots' deeper, different-depth root system avoids competing with a tomatillo's shallower feeder roots just as it does with tomatoes. Fennel's allelopathic suppression and the shared blight risk with potatoes both apply here too, for the identical biological reasons - a tomatillo is close enough to a tomato, taxonomically, that these aren't separate coincidences but the same underlying relationships showing up again in a related species.

Harvest and Storage

A ripe tomatillo fills its husk snugly and the husk itself turns papery and tan in color; fruit still loosely rattling inside a green, tightly closed husk simply isn't ready yet, even if it already looks full-sized. Whole, husked tomatillos keep for several weeks refrigerated in their own husks, considerably longer than a comparable ripe tomato would - the husk itself provides real physical protection against both moisture loss and bruising in storage.

Salsa Verde and Why Firmness Matters More Than Sweetness

Unlike most fruiting nightshades, tomatillos are almost never eaten raw off the plant the way a cherry tomato might be - the flesh is dense, tart, and mildly sticky under the husk (a coating that rinses off easily), and the whole point of the fruit is roasting or simmering it down into salsa verde, where its acidity and body hold up to long cooking far better than a tomato's would. This changes what "ripe" should mean for a cook rather than a gardener: a slightly under-ripe, still-firm tomatillo that hasn't gone soft actually holds its shape better through roasting than an over-mature one, so many cooks deliberately harvest a touch earlier than the husk-browning stage described for pure ripeness.

Pests Worth Watching

Flea beetles and hornworms both target tomatillos with roughly the same appetite they bring to tomatoes, since the plant offers the same nightshade leaf chemistry those pests are adapted to. Because tomatillo foliage is dense and the fruit hides inside husks close to the stem, hornworm damage can go unnoticed longer here than on an open tomato plant - a periodic close look through the foliage, not just a glance from a few feet away, catches an infestation before it strips meaningful leaf area and cuts into the plant's fruit-ripening energy.
